I have found user's with similar problems in the past. Oftentimes, the issue was that in large projects with many drawings/models referenced in someone had mistakenly used the ATTACH option instead of OVERLAY. When ATTACH is used, it brings many other items along with it besides just graphics. When you plot, it is incredibly slow because ATTACH brings over all of the resource files in addition to the graphics. This can be tough to sniff out sometimes in large projects, but the AutoCAD Reference Manager makes it easier. Not sure if this is your issue or not, but worth checking into!
